Dr. Kilara is a consultant to the food
industry. His practice specializes in dairy foods, ingredient
functionality, formulation, product development and training.
Prior to starting his own business Dr. Kilara was a director
of protein research at Monsanto Co. He has also served as
a faculty member at Penn State for 20+ years.
He has published over 110 papers, holds
two U.S. Patents and has authored chapters in several books
in his areas of expertise. He is a sought after speaker
and has appeared on all major national TV channels and numerous
publications as a spokesman for ice cream and dairy foods.
He directed the famous Penn State
Ice Cream Short Course for 13 years. This course was offered
in Australia as well. He has traveled extensively in Europe,
Central America, Asia, Australia, and New Zealand in connection
with ice cream. He has also conducted collaborative research
with scientists in Australia, New Zealand, Canada, Egypt
and Japan.
