Research Interests
My research interests are in the
areas of food and human nutrition.
Current emphasis is being given to several areas, among
them are the metabolism of beta-carotene including cleavage
mechanisms, the analysis of the cis isomers of beta-carotene
in both fruits and vegetables, and in human sera and the
effects of processing on the cis isomer content of foods.
In addition, studies in other areas of nutrition are currently
being conducted and include: the use of immobilized enzymes
for the assessment of process induced protein modification
and construction of chimeric proteins utilizing immobilized
transglutaminase.
