Research Interests
My research program consists of work in
two areas: Thermal
Processing and the study of Moving
Boundary Problems. Mathematical modeling and the determination
of physical and thermal properties is used in each of these
areas to develop a better understanding of the fundamental
transport mechanisms which control the processes of interest.
My program seeks to utilize the natural diversity of food
science by incorporating other aspects, such as chemistry
and microbiology, into food engineering research.
